Potato Curry
One of my soul food recipes is a simple potato curry. Ingredients are plain, spices are distinct, and the sauce that forms from slow cooking and adding yogurt is moppable with a piece of naan. Potatoes are often maligned yet it is not the fault of the tuber rather the high calorie, high fat ways we prepare and enhance its flavor.
