It’s a collection of sad vegetables, grains or forgotton scruff ends of eggplant, onion and herbs. With a little imagination, it will become something original, tasty and completely yours! I am not alone in leaving a couple of cherry tomatoes behind in the container ‘incase’ I decide they have a purpose. Or get carried away with the stunningly inexpensive eggplant at my local favorite market. Food waste is a serious issue, so gather the unloved onto the bench, and think how you might add a can of tomatoes, a sprinkle of parmesan, and wrap it in eggplant or cabbage leaves. Welcome to Involtini - literally, an Italian dish of thin sliced vegetable wrapped around another food. Yum!
